LADYBIRD JOHNSON’S CHEESE CRACKERS
If you had a play day a few weeks ago and made yourself a batch of those Rice Krispie Chocolate Candies, RICE KRISPIE CHOCOLATE CANDIES – KITCHEN HIVE then you might still have a half box of Rice Krispies in the pantry. Well here you go—another play day project. Word has it that Ladybird Johnson made these for parties, for gifts, for her grandchildren—down at the ranch. But chances are this cheesy treat, or something similar, has shown up on bridge tables across the South. Recipe is easily doubled to make about 6 dozen crackers.
- ¾ cup butter at room temperature
- 8 oz cheddar cheese, grated—not pre-shredded
- 1 cup flour
- A bit of cayenne pepper, to taste
- 2 cups Rice Krispies
In food processor, mix butter, cheese and cayenne—add flour and mix well. Fold in Rice Krispies. Drop by teaspoons full on to parchment lined cookie sheets. Slightly flatten each cracker. Bake in pre-heated 350’ oven for about 25 minutes. Let cool to crisp up. These freeze well— re-crisp them for 5-6 minutes in a 300′ oven.
