SPICED PINEAPPLE AND CUCUMBER SALAD
It’s almost time to pile on the end of summer salads. Cucumbers abound—pickle makers are busy. And fresh pineapples are available now too. Labor Day picnics and cookouts can always use another big bowl of something sweet and spicy—and here it is. Spicy is in the taste of the diner—and this one can go all the way up the Scoville scale, if you want. The “heat” component of the dressing is made separately. And the” sweet” part tempers the flames! Add a little sliced red onion for more color.
Salad:
- About 3 cups chopped cucumbers
- About 2 cups pineapple chunks
- ½ cup chopped cilantro
- A little sliced red onion, if using
For dressing:
- A little (or more) of your favorite hot sauce or paste—mixed thoroughly with sesame oil, a little rice vinegar and honey or maple syrup
- 3 tblsp rice vinegar
- 1 tblsp + sugar
Toss salad ingredients in large bowl. Thoroughly whisk together dressing ingredients. Mix dressing with salad and refrigerate for a little while. Stir salad before serving.
