ROSA PARKS FEATHERLITE PEANUT BUTTER PANCAKES
Rosa Parks’ remarkable story is familiar. After her workday as a seamstress in a Montgomery, AL department store, she refused to give up her seat on a segregated city bus while White patrons were standing. She was arrested. A boycott of buses was organized throughout the Black community on the day of her trial. Her bravery led to the 381-day Montgomery Bus Boycott and a Supreme Court Decision declaring segregation on public transport to be unconstitutional. As a result of her actions, both Rosa and her husband lost their jobs and then moved north to Michigan. But her childhood roots in the south, and her love of food and cooking, stayed with her. She was well-known for her old-fashion lemonade—which involved boiling water and sugared lemon rinds. And for her peanut butter pancakes. Her recipe follows, written in her own hand, on the back of a banking envelope.

“Sift together:
- 1 cup flour
- 2 tblsps baking powder
- ½ tsp salt
- 2 tblsp sugar
Mix:
- 1 egg
- 1 ¼ cup milk
- 1/3 cup peanut butter
- 1 tblsp oil
Combine with dry ingredients —cook at 275’ on hot griddle” (flipping once).
