Quesadillas—meat, cheese, greens
Is The Hive the only kitchen left that didn’t know how easy it is to make these delicious treats?? All it took was a quick conversation in the grocery store with my young Latina neighbor to resolve the situation. This turns out to be almost a pantry recipe to the more worldly among us. And it’s also one that the fillings and condiments can be what you like them to be. This makes 4-5 servings, depending on appetite and how full you like the quesadillas.
You’ll need some ground beef, an onion, garlic, tomato paste, chopped greens and chili powder– a package of 8” tortillas and shredded cheese (your choice, or the packaged Mexican cheese mix)
• Brown 1 lb ground beef in a little oil
• As beef browns, add one well-chopped onion, some chopped garlic, a little tomato paste, salt and pepper, and some chili powder
• When mixture is almost done, add some finely chopped greens (spinach, kale, swiss chard) and some sprigs of cilantro
• Remove from pan and set aside
In the cleaned pan (you might want to get a second pan going here now, or use a griddle), melt a little butter and brown tortillas until bottoms are browned. On one half of tortilla put some shredded cheese, some of the beef mixture, and a bit more cheese. Flip the bare half over the filled half of the tortilla, let cheese melt some, then flip so it melts a little more. Remove to platter, place in warm oven, and repeat until you have 8 filled tortillas.
Serve with salsa, guacamole, diced tomatoes, sour cream and lime wedges.
