PEARS IN VANILLA CREAM

Count the times when a fast, simple, delicious fruit dessert would be the perfect thing to have—-when you’re too busy to bake, when unexpected friends arrive and stay for dinner, when you have a few ripe pears!  This prep is almost too easy to be called a recipe.  Serve pears and a little cream in small bowls, with a plate of store-bought shortbread, for a very elegant presentation.

  • 2 ripe pears
  • 2 tblsp sugar
  • 2 tblsp soft butter
  • ½ cup heavy cream
  • 1 tsp vanilla
  • 1 tblsp cinnamon sugar mix

Peel pears and cut in half lengthwise.  Scoop out the core and place the halves, face down, in a well buttered baking dish.  Sprinkle with sugar and dot with the soft butter.  Bake at 450’ for about 15 minutes, until pears are soft.  Then mix heavy cream with vanilla, pour over pears and cook for  5 more minutes.  Remove from oven, sprinkle with the cinnamon sugar, and let pears cool before serving.
