ORANGE TEA COOKIES
There’s nothing like a nice big platter of good-size cookies—but every once in a while, the occasion might call for something a little more petite. Try these. Crisp, buttery, nicely orange flavored—just right with a cup of tea or a late afternoon glass of wine. A few ingredients, easy to put together—even a nice project for a beginning baker.
- 1 stick salted butter, room temperature
- 1/3 cup sugar
- 1 cup plus 2 tblsp flour
- 1 1/2 tsp baking powder
- 1/3 cup frozen orange juice concentrate
Beat butter and sugar with an electric beater until smooth and well mixed. Add orange juice concentrate and beat to mix well. Whisk the flour and baking soda together. Slowly add flour mixture to butter and sugar, beating until it’s all incorporated. Pull dough together with spoon into a smooth ball and refrigerate for 30-60 minutes. Using two teaspoons, form loose balls of dough about the size of walnuts. Place on parchment lined cookie sheets. Flatten slightly with fork. Sprinkle tops with coarse sugar. Bake in preheated, 350’ oven, for 15-20 minutes. Cookies are done when undersides are a light brown color.
