Old Fashioned Baked Custard
This is one of those satisfying, and very simple treats—a winter afternoon surprise snack, a sweet gift for a friend with the flu, or some self-care for the cook. Just a few ingredients, one mixing bowl—then into the oven. Perfect baking involves a bain marie –a fancy term for a hot water bath. So, you’ll want to set 2 cups of water to boil as you start the prep.
Ingredients:
• 2 cups milk
• 2 eggs
• 4 tblsp sugar
• Splash of vanilla
• Pinch of salt
• Grated nutmeg
Beat together eggs, milk, sugar, vanilla and salt. Place custard cups in high-sided baking dish. Fill cups ¾ with custard mix and sprinkle nutmeg on tops. Set baking dish on pre-heated oven rack and carefully pour hot water around cups to about halfway up. Bake at 325’ for 40-55 minutes. When done, the custard will still have a slight jiggle in the center; a knife inserted in the center should come out clean. Top with a few fresh berries.
