MONTE CRISTO SALAD

Who doesn’t love a hot, cheesy, crispy Monte Cristo sandwich, the American version of a Croque Monsieur?  Here’s something just as delicious, and probably way healthier too—a Monte Cristo salad.  All the great flavors of the sandwich, and more.  The only real prep would be boiling a couple of eggs and shaking up the tangy honey mustard dressing.     A dinner salad for one—or a great big bowl for a crowd. 

  • Salad greens, washed and torn
  • Diced tomatoes
  • Thin sliced deli turkey breast, cut in strips
  • Thin sliced ham, cut in strips
  • Swiss or Gruyere cheese, cubed
  • Hard boiled eggs, sliced
  • Flavored croutons

Dressing:

In a jar with tight fitting lid, add equal parts Dijon mustard, olive oil, apple cider vinegar, and honey.  Add grated garlic to tase—then add sea salt and pepper.  Shake very well to combine.

Combine all salad ingredients except croutons and sliced eggs.  Add dressing and toss just before serving.  Top with eggs and croutons.
