LEMON ROAST CHICKEN

What’s better than a beautiful roast chicken dinner?  A roast chicken that takes about 10 minutes to prepare!!!  Chicken and lemon—always a great combo.  But the secret ingredient added here?  Mayo!  Whether you do Hellman’s, Dukes or any other, it works.  The kitchen smells great while it’s roasting and dinner can be as simple as adding a salad and some good bread.  Enjoy.

  • 1 medium size chicken, patted dry
  • 1 lemon
  • 1 onion, cut into chunks
  • Garlic cloves, to taste
  • 1/2 cup mayo
  • 1 tblsp vinegar
  • 1 tblsp honey
  • 2 tsps Worcestershire sauce
  • A little cayenne pepper
  • Salt and pepper to taste

Zest the lemon into a bowl—cut up the rest of lemon and stuff into chicken, along with onion and garlic.  Add remaining ingredients to lemon zest and mix.  Rub mixture all over chicken and up under the skin over the breast.  Roast in preheated 425’ oven on a roasting rack over a baking sheet.  Roast for 50-60 minutes—meat thermometer should read 165’.  Tent loosely with foil if chicken is browning too rapidly at about 30 minutes.  Let chicken rest for at least 15 minutes before carving.
