KIWI TARTS
Kiwis—-perfect decoration for the fruit plate, the cheese board, but what else? They always seem to be in season—sometimes 5/ $1 they’re so plentiful. So yes, there is something else—kiwi tarts. A simple microwave jam, some store-bought pastry shells, some whipped cream—and there you have a pretty dessert. The jam will be a bit tart, so sweeten the whipped cream a little.
- 4 kiwis, peeled and finely chopped
- Zest of 1 lime
- 2 tblsp lime juice
- ¾ cup sugar
- 10-12 small pastry cups, baked (frozen or home-made)
- Whipped cream
To make the kiwi jam:
Mix all but pastry cups in micro-wave safe, medium casserole dish. Microwave for 5 minutes. Stir, then microwave for 3-minute intervals until mixture thickens and coats the back of a spoon. A good test for doneness—put a saucer in freezer. Drip a bit of jam on tilted saucer—if it doesn’t run, it’s done! Cool jam until set.
Fill baked pastry cups and top with a bit of sweetened whipped cream.
