Jordan Marsh Blueberry Muffins
Remember when department stores were filled with wonders—like walking through the front doors into the perfume department, like riding escalators past floors full of color, like knowing that somewhere in that vast wonderland, there was a real restaurant? Jordan Marsh in downtown Boston was Boston’s first department store, 14 floors of merchandise, and famous for its blueberry muffins. The beautiful old store is long gone to the wrecker’s ball—but those muffins linger on.
• Soften 1 stick of butter and mix thoroughly with 1 cup of sugar
• Add in 2 beaten eggs and mix well
• Add ½ cup of milk and 1 tsp of vanilla and mix well
• Whisk 2 cups of flour, 2 tsp of baking powder and 1 tsp of salt, and add to wet ingredients—mix well
• Carefully fold in 1 ½ to 2 cups of blueberries
• Preheat oven to 375’
• Fit muffin/cupcake pans with paper liners and add muffin mixture (to make 12 large or 18 medium-size muffins)
• Sprinkle tops with sugar and bake for 25-30 minutes
