HOT PEPPER JELLY STICKY WINGS
Who doesn’t love sticky wings? Who loves standing over a grill, turning, brushing, then turning some more? Here’s the shortcut you need to turn out platters of these sweet spicy treats in about an hour. And it’s as simple as a jar of hot pepper jelly! A 16 oz jar is enough for 4 lbs of wings—halve the recipe if you’ve got a small crowd.
- 4 lbs chicken wings, tips removed and discarded, then wings separated at joint
- Salt and pepper
- 1 tsp garlic powder (or to taste)
- 1 tblsp olive oil
- 2 cups hot pepper jelly
- 2 tblsp apple cider vinegar
- 2 tblsp butter
Using hands, very lightly oil wings then season liberally with salt, pepper and garlic powder. Spread wings on lightly oiled racks on lined baking sheets. Bake in pre-heated 350’ oven for about 30-40 minutes, flipping wings after 20 minutes. Check for doneness. While wings bake, heat hot pepper jelly, vinegar and butter—simmer gently for 3-4 minutes. Set aside in a large bowl and let cool. When wings are cool enough to handle toss them in the bowl with jelly sauce. Spread out wings on the racks and broil for 4-5 minutes—until glaze starts to bubble in spots. Garnish with finely chopped scallion tops. Good at any temperature!
