FRIED EGGS ON BREADCRUMBS

Sometimes all you really want are a couple of quick eggs that don’t taste like you just threw them into the pan.  This may be the ticket.  Brown some breadcrumbs with flavorful add-ins to taste, top with the eggs and finish under the broiler.  Don’t even need to make toast!

  • 1 cup bread crumbs, day old bread (Panko works too)
  • Sea salt and pepper to taste
  • Ground fennel seeds
  • Chile flakes
  • 2 tblsp Parmigiano or Romano grated cheese
  • 3-4 tblsp olive oil
  • 4 eggs
  • Splash of lemon juice

Mix ground spices, salt and pepper, breadcrumbs and grated cheese.  Turn on broiler.  Heat olive oil in a non-stick, oven-proof sauté pan—when hot, add crumb mixture, stir with oil, then set in single layer.  When crumb mixture starts to darken, crack the eggs into the pan.  Fry eggs until whites start to set—then put the pan under the broiler.  Watch closely until yolks are set to your taste.  Slide onto plates– splash with a little lemon juice and a bit more salt.  That’s it!
