END OF WINTER SALAD

Summer salads seem a long way off—even with Daylight Saving Time starting.  Here’s a fresh tasting, nice looking and very easy to put together pre-Spring side salad.  Avocados and limes are at their best right now.  Combine fresh and canned ingredients, and a lively citrus dressing, for an easy dish that goes with almost anything.  Adjust quantities to suit your table.

Salad:

  • Black beans, canned—drained and rinsed
  • Corn, canned, drained—or frozen and defrosted
  • Avocado—chopped
  • Bell pepper, fresh, orange or yellow—chopped
  • Cilantro—leaves cut roughly

Dressing:

  • Olive oil
  • Lime juice
  • Honey
  • Cumin
  • Sea Salt

Toss salad ingredients in large bowl.  Combine dressing ingredients, to taste, in glass jar with tight fitting lid. Shake well.  Pour a modest amount of dressing over salad and toss to coat.  Serve the rest of the dressing in a small pitcher.  There you have it!
