CORN CHEESE
Folks stopping over in a little while for iced tea or cocktails on the screen porch? Here’s a really easy hot dip to go along with the cool melon bites and the briny olives. Fresh corn is at its best in mid-summer, and 20 minutes prep is all this needs.
- 2 ears fresh sweet corn, kernels removed
- 4 oz shredded mozzarella cheese
- ½ cup mayo
- 1 ½ tsp sugar
- Salt and pepper
- 2 scallions, sliced thin
Combine all ingredients except scallions, until well mixed. Transfer to a buttered baking dish and set in 400’ oven. Bake for 10-15 minutes until cheese bubbles. Run under the broiler if the top needs more browning. Scatter sliced scallions over top and serve with bread, chips or crackers.
