BROCCOLI SALAD   

This is another one of those sides we all know about—especially if we use those great old community cookbooks.  Broccoli is such a reliable vegetable—colorful and almost always available.   This salad shows up at pot lucks, backyard barbecues, and often on the holiday table.  Takes about 15 minutes prep—with possibly the simplest dressing ever invented.  Mix salad and dressing ingredients to taste for a salty, sweet, creamy, crunchy, healthy-ish side or salad dish to pass.  Size recipe for the number of people at your table. 

Salad:

  • Broccoli, blanched or raw—cut into bite-size pcs, stems thinly sliced
  • Several slices of bacon, cooked and crumbled
  • Roughly grated carrot
  • Finely chopped red onion
  • Dried fruit—raisins, cranberries, etc
  • Sunflower seeds
  • Chopped nuts
  • Crumbled blue cheese

Dressing:

  • Mayonnaise
  • Sugar
  • Apple cider vinegar
  • Orange juice concentrate
  • Salt and pepper

Toss all salad ingredients in large bowl.  Whisk dressing then add in increments—until it’s just the way you like it.  Cover and refrigerate, up to overnight, and toss gently before serving.
