BAKED SAUSAGE AND APPLE SHEET PAN DINNER

When any recipe says “Prep time—5 min”, I’m in.  Actually, this might take 10 min if you decide to brown the sausage first.  When I can find those delicately flavored, French boudin blanc, I’ll use those—otherwise, any sturdy, light sausage works fine.  Everything else gets chopped quickly, tossed with herbs and spices and slides on into the oven.  Use a large enough rimmed sheet or pyrex baking dish so that everything spreads out in a single layer.  Quick and easy—yes indeed.

  • 2 apples, cored
  • 6 small red-skinned potatoes
  • 4 carrots, peeled
  • 1 red onion, peeled
  • 2 tblsp sage
  • 2 tblsp rosemary
  • 1 tblsp honey
  • ¼ cup olive oil
  • Salt and pepper to taste
  • 4 sausages, small X cut on ends to prevent splitting

Roughly chop apples and vegetables, leaving skins on apples and potatoes– place in large bowl.  Add honey and olive oil and toss well.  Add seasonings and toss again.  Put all on sheet pan or baking dish—add sausages.  Bake at 400’ for 30-40 minutes until everything is cooked through.
