Luxury…even with holiday bills

It’s hangover time and I’m not just talking alcohol. The bills are trickling in. One by one the forgotten splurges of the season are making their appearance and putting a dent in your wallet. Ok, that’s one less evening out. Oh! There’s another!

Relax. You don’t have to feel deprived. In fact, given the absolutely frigid weather we’re experiencing in much of the US, it may even be to your benefit to have a delicious trick up your sleeve to entice people over to your place. That’s what I’m going to do. I’ve started already with this incredibly simple and tasty twist on an old standard. I thank Julie for turning me on to these salty and sweet little treats. With no further ado, let me introduce you to…

Proscuitto and Mandarin Bites

Ingredients:

  • Proscuitto, thinly sliced
  • Mandarin oranges, peeled with most of the white membrane removed

Directions:

  1. Take a piece of proscuitto (I ususally cut the slices in half) and wrap it around a slice of mandarin. I tend to let the mandarin pop out, so that people know what they’re getting themselves into.

That’s it! This particular platter used 3 ounces of prepackaged proscuitto and two peeled mandarin oranges. That will definitely not break the bank. A quick FYI, you generally have more purchasing power if you go to the deli counter and ask them to slice the proscuitto by hand. Be sure to ask for extra thin slices. By all means, enjoy!
