Great (EASY) Chicken Wings

February barbecue, anybody? Starting to watch folks in down jackets firing up the cookers—desperate for wings and a beer, and Spring! But for anyone still shoveling snow off the back deck, or balcony, here’s a pretty good oven barbecue recipe. Not only is it fast and easy (think 5-minute prep) but the sauce only has 4 ingredients.

Great (EASY) Chicken Wings
• 10-12 chicken wings, or just the drumettes
• ½ cup (or more) raspberry jam
• Balsamic vinegar
• Soy sauce
• Crushed red peppers
• Mix sauce ingredients ‘til smooth—adjust to personal taste

Set oven to 375’ degrees—add 2 tblsp butter to baking dish and melt in oven. Remove dish, add wings, spoon a little sauce on wings and bake for 10 minutes. Remove dish, baste wings with pan drippings, spoon a little more sauce over wings. Bake for 10 more minutes. Repeat this one more time and check for doneness—165’ on meat thermometer, or fork tender. Broil for 2 minutes on high, or use kitchen torch for extra crispness. Recipe is easily doubled for a crowd.
