Crisp Crunchy Baked Tomatoes

Finally cool enough to crank up the oven for a few minutes. And you’ve maybe had enough cold tomato sandwiches for a while. There are still some really good late-summer tomatoes to be had, and they’re too good to waste. This delicious, crunchy, cheesy side dish is not only fast and easy to put together, but the brief time under the heat intensifies that sweet summer taste of the tomatoes.

• Pre-heat over to 400’ and butter a shallow baking pan
• Thick slice a few tomatoes, to fill pan in single layer
• Mix a handful of bread crumbs, grated cheese (cheddar in this recipe), some dried oregano, garlic powder, salt and pepper
• Add a tablespoon or two of olive oil to barely moisten bread crumb mixture
• Cover each tomato slice with cheese/breadcrumb mixture
• Bake 10 to 15 minutes, just until lightly browned
