Cocktail Party Cheese Again?
There’s probably not a Junior League cookbook around that doesn’t have some version of this cocktail party snack. And talk about fast, easy and adaptable—this recipe has 1, count ‘em, 1 ingredient! You could play around with spices, a bit of paprika or thyme. A crunchy complement to a plate of grapes or sliced apple and pear, splashed with a little lemon juice. Sounds like an impromptu wine and cheese at your place.
Cheese Tuiles
• Extra sharp cheddar cheese—from grocery staple, to fresh-cut off a wheel
• Parmesan works fine too
Grate cheese into thin strips—large holes on hand grater
Line baking sheet with parchment paper—4 oz. of grated cheese will need 2 baking sheets
Arrange cheese in thin layers and shape into 3” rounds—use fork to shape circles
Bake in pre-heated 400’ degree oven for about 5 minutes, ‘til melted, bubbly and getting browned edges
Remove from oven, let stand for 30 seconds before moving them
Remove to rack to cool OR drape over rolling pin for curved shape, like the tiles they’re meant to resemble (a lot of mess for not much charm)
