Johnny Cash’s Mom’s Meatloaf

OK, it’s not as iconic as Elvis’ peanut butter, banana and bacon sandwich. But since I’m a life-long Johnny Cash fan I couldn’t resist the MSN story about Peggy Knight, the Cash family housekeeper, and the family’s favorite foods. A real down-home recipe, this meatloaf is not only quick and easy to put together, it tastes great, it’s economical and you’ve probably got almost everything you need in the house already.

In a large bowl combine:
• 2 lightly beaten eggs
• 2/3 cup finely crushed saltines moistened with ¾ cup milk
• ½ cup chopped onion
• ½ tsp rubbed sage
• Salt and pepper to taste
Then add 1 ½ lb. lean ground beef and mix gently
Shape into an 8” X 4” loaf in 15” X 10” baking pan

In a bowl combine well, 1 cup ketchup, ½ cup packed brown sugar and 1 tsp Worcestershire sauce for “barbecue” sauce
Pour some sauce over meatloaf—save the rest for serving. Bake at 350’ for 60-65 minutes—until thermometer reads 160’
